Vegetables soup is the combination of well cooked different healthy green vegetables.
Vegetables are very healthy green leaf that boost our immune systems.
vegetables provide key vitamins, minerals, and fiber, but some offer more health benefits than others.
Vegetables can be eaten either raw or cooked and play an important role in human nutrition, being mostly low in fat and carbohydrates, but high in vitamins, minerals and dietary fiber.
Many nutritionists encourage people to consume plenty of fruit and vegetables as it helps prevent us from some disease and infection.
Vegetables soup recipe is the combination of well cooked different healthy vegetables ranging from Water leaf, green, scent leaf, spinach,pumpkin leaf etc. The combination depends on your choice of leaf.
To prepare vegetables soup, you will be needing;
- Waterleaves
- Ugu leaves (fluted pumpkin)
- Scent Leaves
- Green leaves
- Fresh fish (mackerel preferably)
- Dry fish
- Cow skin (ponmo) meat
- 1 cup crayfish
- 6 scotch bonnet peppers
- 2 big bulbs of onion
- 1½ cups of red palm oil
- 3 seasoning cubes
- Salt to taste
Note: The quantities of the ingredients depends on how big/small you want your pot of soup to be.
Method of preparation
Gather the vegetables, wash it with salt then slice/cut it into small pieces and set aside.(The essence of washing with salt is to remove some tiny insects and germs that might be in the leaves)

Wash the fresh fish; wash and debone the dry fish, then Wash the cow skin (ponmo) meat and set aside.
Pound/grind the cryfish and peppers together. Slice the onions.
Cooking Procedures
- Pour the Meat/cow skin into a pot, add some water, seasoning cubes, salt and some onions. Place the pot on fire/cooking gas and allow for 10 minutes.
- After 10 minutes, add the deboned dry fish and allow for 2 minutes.
- Add the remaining onions, pour in your red oil and stair.
- Add the scent Leaves and allow to Cook for 10 seconds. Then add the remaining vegetables, little by little. ( Ensure to turn it as you add the leaves).
- Turn it all together to mix well.
- Add the fresh fish, grinded pepper and cryfish and other seasoning for taste.
- Allow to Cook for like 20 seconds, then carry it down and off the fire/cooking gas.
Serve with any swallow of your choice (Semovita, eba, fufu, wheat etc). As an African lady I prefer using FUFU because it goes well with the vegetables soup 🤗
