Recipe on how to prepare ofe Nsala (white soup)
Nsala soup or white soup as commonly
called by Nigerians is a meal famous to the eastern tribe and riverine area of
Nigeria.
Ofe Nsala (White Soup) is a mouth
watering delicacy peculiar to the Igbo tribe of Nigeria, especially the people
of Anambra state. It is a very rich fresh fish soup, traditionally made with
Catfish.
The unique feature of this soup is that
you do not cook it with Palm oil. The major components of this soup are yam and
catfish. However, you can use any other proteins of your choice for cooking,
although catfish is an essential requirement.
Ingredients
Yam
Uziza seed(fresh)
Goat meat(any type of meat or catfish)
Seasoning
Salt
Fresh pepper(not red one)
Uziza leaves (optional)
Crayfish
Procedures
- Wash the meat and place aside
- Wash and chop the uziza leaves and place aside
- Wash and grate the fresh pepper and uziza seeds
- Wash and blend the crayfish
- Boil and mash the yam
- Cook and season the meat with the seasoning cubes, salt, onions, pepper.
- When the meat is cooked and boiling, scatter the mashed yam into it and allow to thicken
- Pour in the crayfish
- The soup should be thick, tasty and ready now pour in the uziza seed and allow to steam
The
soup is ready! Serve with pounded yam
Note: No oil is added to this soup, that’s why it is called white soup
