Coconut Rice and Tomato Sauce Recipe

Nigerian Coconut Rice is always a welcomed dish in many homes, parties or events. It’s rich coconut taste and aroma always get my guests asking for more.

The spicy tomato sauce condiment is very nutritious and lends a floral undertone to the rice. The basic flavours of tomatoes and coconut dominate and the spices used in the making of this rice impart subtle highlights.

Ingredients for coconut rice

  1. Four cups of rice
  2. Two coconuts
  3. Fresh red peppers
  4. Onions
  5. Salt
  6. Crayfish
  7. Coconut oil
  8. Other seasonings

Ingredients for tomato sauce

  1. Fresh tomatoes
  2. Fresh peppers
  3. Onions
  4. Enough garlic
  5. Salt
  6. Maggi cube
  7. Vegetable oil

Preparation method - Coconut rice

Step 1: Chop the coconuts and blend with warm water for about six minutes then sieve the coconut milk out of the blended coconut and set aside. 

Step 2: Parboil the rice for about 10 minutes. After parboiling, sieve it and set aside.

Step 3: Heat a pot and pour a little coconut oil to intensify the flavor then add the fresh peppers, onions, salt and seasoning. 

Step 4: Also add the coconut milk and parboiled rice then cook for 15-30 minutes

Step 5: Once the rice is almost done, add your crayfish.

Preparation method - Tomato Sauce

Step 6: Pour a little vegetable oil into a pan

Step 7: Add onions, garlic, fresh tomatoes, fresh peppers and seasoning cube.

Step 8: Allow for 3 minutes and set down

Serve the coconut rice with the sauce and enjoy!

NOTE: Coconut rice sometimes turn out a bit sticky because of the cream in the coconut milk, so don’t worry your pretty head about that. A simple remedy is to scoop out a little of the coconut cream, before using it in the recipe.

Ensure you have enough coconut milk to add to the rice if it dries out while still cooking.
